Himachal Pradesh is gifted with natural beauty in abundance . Known as Devbhoomi(Abode of gods), its picturesque beauty and
magnificent mountains has spellbounded many . Land of snow fed meadows, the exquisite cuisines of himachal will surely give your tastebuds a treat .The dishes taste so divine and delish that it makes the travellers visit again and again . Amongst them I would give a special mention for “Dham”. It is a traditional food festival which differs in every region of the state. I have chosen my favourite dishes from six districts of Himachal . Remaining district recipes will be shared in the next blog . 1 ) Kangra - Patrode :

Being my most favourite ,this mouthwatering dish has dueled me since forever .Made from colocasia leaves/arbi leaves and gram flour ,this has every himachali’s heart .Dough is made of gram flour,mustard oil,turmeric powder,chilli powder,hing( asafoetida ),homemade garam masala and more. It is spread on the leaves and then they are rolled,boiled and fried in mustard oil and finally sliced and eaten with yoghurt . Special mention :Black Channa Khatta – This is savory and tangy curry made of rice flour,amchur/dry mango powder,black chana/brown chickpeas soaked overnight and alot of spices . 2) Chamba - Rajmah Madra

Rajmah Madra is one of the favourite items prepared in Chamba district . According to a story ,Raja Jaistambh,son of Raja Maru,had a fondness for Kashmiri dishes,so he invited the chefs from Kashmir to prepare a unique and tasty dish from the ingredients grown in Chamba .As Rajmah (Kidney Beans ) was the main produce that time,so a unique dish out of rajmah,more than thirty different spices,yoghurt and ghee(clarified butter ) was made. Since then this dish has evolved and is enjoyed by the people .
3) Hamirpur - Bhatura and Beduan Roti :

Bhatura is one of the favourites of hamirpur. Its made with fermented wheat flour roasted or deep fried. Beduan roti is a form of it prepared during special occasions where bhauturas are stuffed with soyabean,black gram (urad dal ) or mashed colocasia bulb and then fried .
Special Mention :Ambua –Made with local grown mangoes,it adds a flavor in mouth .
4) Bilaspur- Bilaspuri Dhotu Dal

Its one of the dishes served in bilaspuri dham alongside dishes like ghandyali Madra, Palak Kachalu etc .A tempering of certain spice mixture consisting of fennel, cloves, cardamom and other spices in lots of ghee(clarified butter) are added to soaked dhuli maash dal (Urad dal/Black Lentil/Black Gram) and then cooked in water for sometime . Its simple yet very tasty .
5) Mandi - Sepu Badi Madra

Known for the special variation of dham known as ‘Mandiyali Dham ‘ ,it offers a large variety of dishes . Sepu Badi(Mukand Badi), prepared from fresh spinach leaves and mash (black lentil) and chana (Bengal gram) that are soaked overnight and boiled in water in turmeric leaves and cut in pieces are deep fried. Then these pieces are added in curd and spices mixture and cooked.Kullu-
6) Kullu -Siddu
